Dear "Emergency Substitutions" page in the back of my cookbook

When I am making a birthday cake and find I only have one egg in my fridge when the recipe calls for three and I have no time to go buy more eggs at the store and I look at your wonderful page in my cookbook (breath) in hopes to find something else I have on hand that will work just as well I really expect to find something actually helpful.

If I don't have eggs, I surely don't have egg yolks or egg whites.

And if I had something in my cupboard called "egg substitution product," certainly I would have used that before I looked in the back of my cookbook.

Perhaps you should take the word "emergency" off the top of your page?

    Go team, and is I should be the one to talk -- but really, is the cake THAT important?
